Terre del Conero Boccolotti with artichokes

Ingredients for 4 people:
– 350 g of Terre del Conero boccolotti del batte
– 3 artichokes
– 3 or 4 cherry tomatoes
– one onion to taste
– one clove of garlic
– Terre del Conero extra-virgin olive oil to taste
– grated parmesan cheese
– thyme, salt and pepper

Preparation:
Clean the artichokes and cut them into slices. Saute a little chopped onion and garlic in Terre del Conero extra-virgin olive oil. Let it flavour and then add the artichokes, tomatoes, thyme, salt, pepper and half a glass of water. Cover the pan and simmer for about half an hour or more, until the artichokes are cooked.
Cook the boccolotti in boiling salted water and then toss them in the pan with the sauce. Sprinkle with grated Parmesan cheese before serving.
