Fettuccine ‘Terre del Conero,’ sausage and mushrooms

Ingredients for four people:
- 350g of Terre del Conero fusilli
- 250g of sausage
- 500g of mushrooms
- a clove of garlic
- extra-virgin olive oil (Terre del Conero).
- a little onion
- salt and pepper
- grated parmesan cheese

Preparation:
Pour some Terre del Conero extra-virgin oil into a saucepan and heat up the chopped onion together with the garlic, cut into large pieces. Make sure the mushrooms have been cleaned and chopped, and then add them along with the salt and pepper. Cook and then take away the garlic.
Brown the sausage in a frying pan, and break it up into small pieces with a fork. Then add the mushrooms and a little vegetable stock (or salt and water). If you prefer a red sauce, add a little tomato. Cover the pan for about 15 minutes to allow the flavours to blend in.
Boil the fettuccine  and then add the sauce. Serve with grated parmesan cheese.
