Terre del Conero Fusilli with aubergines

Ingredients for 4 people:
- 350 g Terre del Conero Fusilli
- 3 aubergines
- Some ripe tomatoes
- A clove of garlic
- chili pepper
- Terre del Conero Extra-virgin olive oil
- Grated pecorino or ricotta cheese

Preparation:
Wash the aubergines and cut them into slices of about one centimeter; grill them and brush them with olive oil after cooking.
Cut the garlic into pieces and heat it in Terre del Conero extra-virgin olive oil. Then add the red pepper and ripe tomatoes, cut into small pieces. Sauté the tomatoes, season with salt and add the grilled aubergines. Cover the pot with a lid and cook over a low heat - if necessary, add a little bit of vegetable broth.
Cook the pasta and toss it in the pan with the sauce; then serve with grated pecorino cheese or ricotta cheese.
